We make Pumpkin Bites for our family members who are opting to eat less dairy, tho it is totally possible to make this recipe using vegan cream cheese and using a half cup coconut cream and 2 TBL cornstarch instead of the cream and eggs.

Place all of the ingredients (except for cookies!) in blender or food processor and puree until smooth. Place one cookie in lined mini muffin pan and pour batter over until the top of the liner. Bake in 400° oven for 35 Minutes.
