Ingredients
2 pounds Spaghetti Rigati
2 pounds Fresh Spinach
Dried Basil
1 pound Whole Milk Mozzarella
5 Cloves Garlic
4 tablespoons Olive Oil
Salt and Pepper to taste
Instructions
Cook pasta according to directions on package.
Rinse spinach and place in large stock pot to cook down.
Cut mozzarella in quarters and blend in food processor with peeled garlic.
Add the wilted spinach, dried basil and olive oil and puree until well blended.
Season to taste and serve warm over hot spaghetti
