Pizza Rolls for The Win!!

Search pizza egg rolls on YouTube and you’ll see a slew of folks putting their favorite spin on an unlikely food fusion.  Since we are big fans of Pizza Night at our house, we were intrigued.  Admittedly we didn’t have high expectations.  Would they be too much fuss?  Would they fall apart in oil?  Should we sauce in or out?  After a good deal of deliberation and ultimately flying by the seat of our pants, we opted to make a fresh vegetable marinara in the vitamix and we made a wide variety of Pizza Rolls to suit everyone’s preference.  We even made a plate of vegan pizza rolls with a vegan cheese, artichoke bits, chopped mushrooms and pineapple!  There was literally something for everyone.  We had pepperoni rolls for the meat eaters in our family, we had pineapple pizza rolls, mushroom, sweet pepper and artichoke rolls, we had black olive rolls and even plain cheese.

  1. We asked the family which topping combinations they wanted then did MATH .. lol. We divided up the 40 wrappers (two packages) and labeled plates lined with paper towels so we could keep track of the batches both in prep and in serving on the table. Keep the finished egg rolls under a damp paper towel so they do not try out.
  2. Place one of the points of the wrapper towards you and fill the bottom third with cheese and your topping(s).
  3. Fold the bottom point over the filling and gather back toward you (as if making a sushi roll.) Dip your fingers in a bowl of clean water and wet all of the open edges.
  4. Fold one side in and press lightly.
  5. Then the other side and roll up and over the last point. Store under damp paper towel and continue with all of the remaining wrappers. We had at least three people on prep stations and it really didn't take long at all.
  6. Make sure your oil is very hot and do not over crowd the pan. Let the egg rolls cook on one side only about 15 seconds, then carefully TURN THEM OVER one time and cook for 2 minutes or until golden brown. Tun them over again and cook on remaining side until done. We noticed if we let the first side cook for the full time, they did not want to turn and stay floating on the alternate side. So we turned them quickly once at the start, then they were happy to be on either side as needed.
  7. Drain on paper towel and serve with your favorite pasta sauce. Tricia made a wonderful fresh vegetable sauce with carrots, onion and fresh tomatoes in the vitamix.
