Pasta Plus Sauce

We have always favored a mild tomato sauce in our family.  Even Grandma Pauline used simple flavors that never over powered a dish.  It comes to no surprise that the youngest matriarch has taken the lead as a expert saucier and created a lovely go-to pasta and more sauce that we use for most of our Italian dishes.  Dress it up or down, stick blender or Vitamix, this is one of our family favorite "red" sauces.

Ingredients
  • 56 ounces Organic Canned Tomatoes
  • Onion Chopped
  • 2 Carrots chopped
  • 3 Cloves Garlic, sliced
  • 2 teaspoons Garlic Powder
  • 2 tablespoons Minced Dry Onions
  • 2 teaspoons Dried Basil
  • 1 teaspoon Dried Oregano
  • Salt and/or Pepper to Taste
Instructions
  1. Saute the onion and carrots in a bit of olive oil until the carrots begin to soften. Add the garlic and simmer for another two minutes. If you are using a vitamix, pour the mixture into the blender and add 56 ounces of strained tomatoes. Add your favorite spices and use the "soup" setting to blend for five minutes. If you are using a stick blender, place all of the ingredients in a pot and cook until simmering and then take it off the heat and blend until desired consistency.
