Lady Marmalade Tofu

We often make bbq or teriyaki tofu.  But tonight we were looking for a tangy protein that would marry well with a couscous salad.  We opted not to bake the tofu in the sauce, but rather let people decide how much sauce they wanted at the table.

Ingredients
  • 12 ounces Jar Natural Orange Marmalade
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Grated Fresh Ginger
  • 1 tablespoon Grated Turmeric
  • .5 cups Minced onion
  • 1 cup Sliced Sweet Peppers
  • 2 cups Water
  • 3 tablespoons Corn Starch
  • 4 Tofu bricks
  • Salt and Pepper to taste
Instructions
  1. Drain and slice tofu into half inch thick two inch squares. Sprinkle with olive oil and salt/pepper and bake at 400° oven for 45 minutes.
  2. Simmer the marmalade, ginger, turmeric and onion until the jelly has melted. Next stir the cornstarch into the water until dissolved then pour into the saucepan. Add the chopped peppers and simmer for 10 minutes. Serve alongside the roasted tofu.
