Karma’s Sheetpan Koobideh

An easy way to make a baked mince that resembles a ground meat kabob. We made two versions for our multigen family. One with minced beef (we actually took a tri tip and minced it in the food processor) and one used Gardein Chicken Strips. Both were seasoned with the same mixture and served with the same sauces, making meal prep easy.

Ingredients:
- 3 Packages Gardein Chicken Strips
- 1 bunch Fresh Parsley
- 1 Red Pepper
- 1 bunch Scallions
- 8 ounces Mushrooms
- 2 tsp Seasonings
- Salt and pepper to taste
- Yogurt Sauce
- 1 large bunch Fresh Basil Leaves
- 2 Scallions
- 20 Ounces Whole Milk Greek Yogurt Plain
- Salt and pepper to taste
- 1 Lemon
- Cucumber Salad
- 1 Large Hot House Cucumber
- 1 Red Onion
- 1 cup Olive oil
- .25 cup Vinegar
- Salt and pepper to taste
- .25 tsp sugar
- .5 tsp Oregano
Directions:
We served this with Jasmine rice and started that cooking first thing.
Then we made the seasoning mince, placing the scallions roughly chopped whites and greens in the food processor, with the fresh parsley, removing only the large stems and the washed mushrooms and blended until very small pieces. Then we placed in a strainer and pressed out as much moisture as we could.
We microwaved the frozen Gardein chickie and then placed it into the food processor to mince. And we used half of our parsley mince (the other half combined with 2 pounds of beef mince for the meat eaters tonight.) We seasoned with onion and garlic powder, oregano, salt and pepper. But you could use turmeric, sumac, and saffron, or other spices like coriander or chili flakes.
Press the mince mixture into a greased sheet pan, then using a spatula or pastry scraper cut into strips about an inch and half wide. Then make smaller dents down each strip to simulate the look of a kabob.
Bake in a 400° oven for 30 minutes or until done.
For the basil yogurt sauce, combine the fresh basil with your Greek yogurt and seasonings and blend until smooth.
For your red onion and cucumber vinaigrette (you can totally add tomatoes for a shirazi salad, we were out of fresh tomatoes tonight), dice your cucumber and slice your red onion thin and toss with your blended vinaigrette.
Serve with fragrent rice and / or Flat Bread.
