Karma’s Kofta Kebabs

These baked kofta-style pinwheels are made with Beyond Beef blended with fresh herbs, garlic, and spices, then spread onto tortillas, rolled, sliced, and skewered before roasting in the oven. It was just as easy to make a second tray using ground beef for the folks in our family who eat meat, and both versions were a big hit. Everyone could share the same meal together while still eating what works for them.

Ingredients:
- 24 ounces Beyond Meat Beyond Beef plant-based ground
- 1 bunch Fresh Parsley
- 1 bunch Chopped Scallions
- 2 TBL Seasoning (we used a combination of paprika, salt, peper, onion powder along with some fresh garlic)
- 4 LARGE Tortillas
Directions:
Add the Beyond Beef, parsley, green onions, garlic, paprika, salt, pepper, marjoram, and onion powder to a food processor.
Pulse until everything is evenly mixed and the herbs are finely incorporated.
Spread the mixture evenly over tortillas.
Roll the tortillas tightly into logs.
Slice into pinwheels about 1½–2 inches thick.
Thread the pinwheels onto wooden skewers.
Place on a parchment-lined baking sheet.
Bake
Bake at 400°F for 25–30 minutes until browned and cooked through.
Yogurt Sauce
Mix yogurt, chopped parsley, lemon juice, salt, and pepper in a bowl until smooth.
Serve
Serve the kofta pinwheels over rice with cucumber, tomato, grilled onion, and a generous spoon of the lemon-parsley yogurt sauce.
