This no bake dessert using home made pudding and a simple two ingredient ganache. By using your own ingredients from scratch you get to control the sugar.

Ingredients
Pudding
3 cups Whole Milk (Can use Non-Fat Milk or plant milk)
.25 cups Corn Starch
2 tablespoons Sugar (You can double or omit)
1 Vanilla Bean (May sub vanilla extract)
Dash of Salt
Graham Layers
1 Box of Keebler Chocolate Covered Cookies
2 Packs Graham Crackers
Creamcheese Whip
16 ounces Cream Cheese
1 cup Heavy Cream
1 Vanilla Bean (May sub tsp vanilla)
Super Simple Ganache
1 cup Heavy Cream
8 ounces Dark Chocolate Chips (May sub milk chocolate)
Instructions
Pudding
Heat 2 cups of milk until nearly boiling.
Mix remaining 1 cup cold milk with corn starch, salt and inside of scraped vanilla bean.
Whisk cold milk mixture into hot milk on stove and stir until it thickens.
Place in heat proof bowl with plastic wrap on top (to prevent a skin).
And chill 2-3 hours.
Cream Whip Filling
Beat two packages of cream cheese frosting (may use neufchatel for less fat).
When fluffy, add sugar (optional) and then while beaters are still going slowly drizzle in heavy cream with vanilla.
Continue to whip until light and fluffy.
Assemble
Place a layer of chocolate covered graham crackers on the bottom of a large 9x12 dessert dish.
Top with chilled pudding.
Top with a layer of graham crackers.
Then spoon cream whip on top.
Top with a final layer of graham crackers.
Pour ganache over top of final layer and chill for at least two hours (or overnight) before serving.
