Julian’s Whole Grain Birthday Cupcakes
Ingredients:
- 0.66 cup Vegetable Oil
- 1 cup Sugar
- 4 Eggs
- 1 cup Soy Milk
- 1 tbsp Vanilla Extract
- 2.5 cup Whole Grain Flour
- 1 tbsp Baking Powder
- 0.5 tsp Baking Soda
- 0.5 tsp Sea Salt
- 0.5 cup Dark Cocoa Powder
Directions:
Whip your oil and sugar until it is light, white and airy. Then add your eggs and beat until fluffy. Add remaining wet ingredients (soymilk, vanilla) and beat until smooth. Combine your dry ingredients and gently fold into the wet, careful not to over mix.
If you are adding the cocoa stir that in now. We make half vanilla and then use the ½ cup cocoa in the rest of the batter.
