These mini cheesecakes are easy to whip up in the instant pot using silicone “egg” moulds. We have two 9 bite moulds so we were able to make 18 little mini cheesecakes. We served them with a variety of berries, sprinkles, chocolate and whip cream for a lovely birthday celebration ♥

Place all of the graham crust ingredients in your food processor and pulse until you have a moist crumb. Wipe out the food processor and repeat with the Oreo cracker crumb base. Spoon or small scoop each base into 9 silicone cups. Chill in fridge. For the filling, place all of your cheesecake ingredients in food processor and blend on high until just combined. Spoon into prepared molds. Stack your silicone molds on a trivet and place inside your pressure cooker. Add one cup of water to the base. Cook on high for 10 minutes and natural release for 10 minutes. Chill for at least 4 hours. Top with your favorite cheese cake topping, or server with a buffet of toppings to let people customize their own bite.
