Green Eggs, No Ham (Puffy Kale Omelet)

You don't need to have a microbiome analysis to benefit from kale.  But one of our family member's did and turns out kale is one of their SUPER FOODS!!  So we have enjoyed finding ways to make kale a centerpiece in our cooking.  It's a good thing.  Anytime we step outside of our four flavor walls, we get to experiment with new tastes, new combinations and new ways to enjoy the journey.

Ingredients
  • 4 Egg Whites (You can use whole eggs or a combination)
  • 1 cup Washed Kale
  • 2 Springs Fresh Dill
  • salt and pepper to taste
Instructions
  1. We use our VitaMix (blender) to make quick work of liquifying the kale and frosthing the eggs. Pour mixture into a hot cast iron pan that has a bit of oil added. Cook over low to medium heat until the edges begin to brown. Place under the broiler for 1-2 minutes to finish cooking the omlet.
  2. Serve with avocado toast for a mega green eggs meal :D
