Egg White Waffles

Sometimes you just want light fluffy dream clouds or maybe you are watching cholesterol.  You don't need a reason to enjoy this light take on a Sunday brunch staple.  Serve with fruit or your favorite waffle topping.

Ingredients
  • 6 Egg Whites (We used half of the yolks in a second traditional waffle mix and the other half fried up for the dogs .. shhh.)
  • 1 cup Cake flour (We had a cup of cake flour in the pantry, you can substitute Unbleached or even whole grain.)
  • .5 teaspoons Vanilla
  • 2 teaspoons Olive oil
  • 1 teaspoon Baking Powder
  • 1 cup Plant or Dairy Milk
Instructions
  1. Beat egg whites until soft peaks, then gently fold in the remaining ingredients and stir until well incorporated. Heat waffle iron and brush with oil. Pour about a cup of batter and cook until steam stops.
