Egg White Waffles
Ingredients:
- 6 Egg Whites
- 1 cup Cake flour
- 0.5 tsp Vanilla
- 2 tsp Olive oil
- 1 tsp Baking Powder
- 1 cup Plant or Dairy Milk
Directions:
1. Preheat your waffle iron and lightly grease with cooking spray or a little olive oil if needed.
2. In a medium bowl, whisk together the cake flour and baking powder.
3. In a separate bowl, combine the milk, olive oil and vanilla. Add to the dry ingredients and whisk until just combined.
4. In a clean mixing bowl, beat the egg whites with an electric mixer until soft peaks form. The whites should be fluffy and hold their shape, but not stiff or dry.
5. Gently fold the whipped egg whites into the batter in two or three additions, taking care not to deflate all that lovely air. A few small streaks of egg white are perfectly fine.
6. Spoon the batter into your preheated waffle iron, using the amount recommended by the manufacturer.
7. Cook until the waffles are golden brown, crisp on the outside and cooked through. Avoid opening the waffle iron too early, as these delicate waffles need a little time to set.
8. Serve immediately with fresh fruit, yogurt, maple syrup or your favorite waffle toppings.
For a larger batch, keep finished waffles warm on a wire rack in a 200°F oven while preparing the rest. These also freeze beautifully and can be reheated directly in the toaster for a quick breakfast!
