Some nights you just need EASY, or cheap, or adaptable for particular diet needs on any given day and this one ticked all the boxes. If you need gluten free, you can use corn tortillas. No processed veggie meats? Use tofu, beans or just plain cheese. Has to be vegan? Omit the cheese or sub with your favorite vegan alternative. We made three skillets tonight for our multi-gen of ten and each of them were delicious.

Make sauce by heating oil in a large pan, adding all of the spices and saute until fragrent. Next add the flour and stir until toasty and combined. Add your tomato base and water and simmer until thickened.

Cook your crumble in the microwave or fry pan. To assemble, Start with a layer of sauce Next place your tortilla and top with crumble, corn and cheese. Add more sauce and repeat. Reserve cheese for the top. After your last tortilla, Spread a layer of sauce and Bake at 350° pre-heated oven for 20 minutes Take out of the oven to top with your reserved cheese and continue baking another 10 minutes. Serve with avocado, sour cream and brown rice if desired.
