Easy Slow Cooker Seitan

Ingredients:

  • 2 cup Vital Wheat Gluten
  • 2 tbsp Minced Dried Onion Bits
  • 4 tbsp Butter or Oil
  • 1.5 cup HOT Water
  • 1 tsp Salt
  • 2 tsp Sugar or Maple Syrup
  • 16 oz Pomegranite Juice

Directions:

Add the vital wheat gluten, dried onion, salt, sugar or maple syrup, and butter or oil to a food processor. Process until evenly combined.
With the processor running, gradually pour in the 1½ cups hot water. Continue processing only until the mixture comes together into a sticky ball. Do not overprocess.
Remove the seitan dough and smooth and stretch it with your hands to form a tight oval loaf.
Place the seitan in the slow cooker. Pour in the pomegranate juice, then add just enough water to barely cover it. The seitan will eventually float; that is normal.
Cover and cook on LOW for 6–8 hours, turning it over once or twice if convenient.
Remove the seitan from the cooking liquid and allow it to rest for about 15 minutes before slicing.
Serve it as-is, or cut it into thick slices and sear in a hot cast-iron skillet with a little butter or oil for 1–2 minutes per side.
