Easy Quick Fresh Tomato Sauce

If you ever see a sale on cherry tomatoes scoop up a half dozen and make the most wonderful quick and easy pasta sauce (okay, you don't need a half dozen unless you are cooking for a family of 10!)  This week, Walmart Grocery home delivery had Organic Grape Tomatoes, 10 oz tubs for $1.28 each.  Naturally we were going to have pasta.

Ingredients
  • 60 ounces Organic cherry tomatoes
  • 3 tablespoons Olive Oil
  • Sprig Fresh Basil
  • Salt to Taste
  • 1 cup Pasta water
  • 3 tablespoons Butter (Optional)
Instructions
  1. Place the cherry tomatoes in a large shallow pan with olive oil and saute until you they begin to break down. Use the back of a wooden spoon to help gently crush the tomatoes and continue to simmer and reduce the excess liquid from the fresh fruit.
  2. Add the fresh chopped basil, salt and other seasonings you desire and continue cooking for another minute or two. Remember to reserve one cup of your pasta water and add to your pan with the butter (if using) and cook until it thicken slightly (another couple of minutes)
  3. Toss with fresh pasta and serve with grated cheese.
