Easy Pumpkin Bites

Ingredients:

  • 24 Vanilla Wafer Cookies
  • 3 Eggs
  • 0.5 cup Sugar
  • 15 oz Canned Pumpkin
  • 1 cup Plant Milk (or Dairy)
  • 1 tsp Pumpkin Spice
  • 0 dash Salt

Directions:

1. Preheat oven to 350°F. Line two 12-cup muffin pans with paper liners and place one vanilla wafer cookie in the bottom of each cup.

2. In a large mixing bowl, whisk together the eggs and sugar until well combined.

3. Add the canned pumpkin, milk, pumpkin spice and salt. Whisk until the mixture is smooth and creamy.

4. Carefully divide the pumpkin mixture evenly among the 24 prepared muffin cups, pouring directly over the vanilla wafer cookies.

5. Bake for approximately 20–25 minutes, or until the centers are just set with a slight jiggle. These are more like little pumpkin custards than traditional muffins, so don't expect them to rise!

6. Remove from the oven and allow to cool in the pans for approximately 20 minutes.

7. Transfer to the refrigerator and chill for at least 2–3 hours, until completely set.

8. Carefully peel away the paper liners and serve chilled. Add a little whipped cream and an extra sprinkle of pumpkin spice if desired.

All the lovely flavor of pumpkin pie without making a pie crust! The vanilla wafers make perfect little individual crusts, and these are great for making ahead during the holidays.
