DIY Mix In Ice Cream

We’ve had our ice cream bowl in the freezer for the last few weeks because it makes it easy to make a fresh batch of soft serve in minutes in the electric ice cream maker.  The nice thing about home made ice cream is that you can decide what to put in and what to omit.  You can control the fat content and how much sugar it will contain.  One of our favorite flavors of store bought ice cream is Stephen Colbert’s AmeriCone Dream by Ben & Jerry.  This isn’t the same by any stretch of the imagination, but it was our best pandemic attempt at comfort ice cream at it’s home made best.

DIY Mix In Ice Cream

Ingredients

Caramel Base

Instructions

  1. Earlier in the day melt the chocolate and coat the inside of the waffle cones or bowls, let cool then transfer to the fridge to set.
  2. Whick together the cream and half and half with the vanilla and caramel sauce. in a large bowl then quickly transfer the mixture into your ice cream maker and process until it is about 2/3rds done. Meanwhile crush your chocolate covered waffle cones/bowls and add to the ice cream before it has completely come together. Enjoy as soft serve right away, or freeze.

Caramel Sauce

  1. Earlier in the day because this needs time to cool completely make your caramel sauce by heating all of the ingredients over medium heat until the sugar dissolves. Let cool at room temperature in a mason jar and then place in fridge to chill completely.
