It's a meal in itself, but we served it with veggie dogs and brats!

Ingredients
5 pounds Organic Red Potatoes
1 pound Colby Jack Cheese (Cubed or shredded)
4 Scallions (thinly sliced)
1 Morningstar Veggie Bacon (Cooked and crumbled)
Dressing
1.5 cup Mayo
1.5 cup Greek Yogurt Plain (May sub sourcream)
5 tablespoons Apple Cider Vinegar
Salt and Pepper to taste
Instructions
Boil potatoes until just fork tender. Leave skins on, cool in fridge.
Assemble dressing and toss with cooled potatoes and your other ingredients (sliced scallions, grated cheese and crumbled bacon.)
