Our popcorn tofu is super but if you are wanting a version of lower fat crispy oven baked tofu goodness this is our new family favorite. Basically we replaced the mayonnaise with egg whites and added ZERO oil. We used a conventional oven, but these delightful squares would work well in an air fryer as well.

Slice Tofu into cubes or squares about a half inch thick. Place on paper towels or clean cooking cloth and weight down to drain about 30 minutes. Make breadcrumbs by combining the crackers and sliced bread in your food processor and blending until small crumb. Season if desired with parsley, onion powered, garlic, paprika, basil, or any flavors that complement the rest of your meal. In a shallow bowl whisk egg whites and water until light and fully combined. Place your whole grain flour in a shallow bowl. Coat tofu, first in flour, then egg white then the crumb mixture and place on rack over a baking sheet. Bake at 400° for 45 minutes.

In order to make the garlic less harsh and easier for some to digest we microwave the garlic with the water for two 30 second intervals. Next, combine all of the ingredients in blender cup, puree and serve.
