Creamy Vegan Pesto Sauce

You don't need to be vegan to enjoy this creamy dreamy pesto.  A vitamix makes easy work of this sauce, but you can use a food processor or stick blender if you have either of those.

Ingredients
  • 1 pound Frozen spinach, thawed
  • 1 onion chopped
  • 1 clove garlic
  • 2 tablespoons olive oil
  • 3 tablespoons flour
  • 1 cup Unsweetened Oat Milk (May substitute any vegan milk)
  • Few sprigs of fresh basil
  • Salt and Pepper to taste
Instructions
  1. Saute the onion in olive oil until soft and translucent. Add the flour and stir until it is coats the onions and soaks up the oil. Add the oat milk to the pan and bring to a simmer to thicken. Add the vegan white sauce to the vitamix and then add the frozen thawed spinach. Add salt and pepper, a few sprigs of fresh basil if you have them. And use the "soup setting" and blend until warm and smooth.
