Blueberry Creamcheese Breakfast Muffins

These lovely high protein muffins are perfect way to start the day.

Ingredients:

  • 6 cups Whole Grain Spelt Flour
  • 4 large eggs
  • 2 TBL Baking Powder
  • 1 tsp Baking Soda
  • 2 cups Greek Yogurt (5%)
  • 1 cup Whole Milk
  • 2 cups Blueberries
  • 8 ounces Creeamcheese

Directions:

Blend the wet ingredients until smooth then pour into the combined dry mixture. Let rest for 10 minutes to give the whole grain time to absorb the liquid.

Scoop into muffin pans, top with blueberries and dollop of cream cheese.

Bake in 400° oven for 20 minutes.

Makes 24 full size muffins and 24 mini muffins
