Better Breakfast Muffins

Ingredients
  • 1 stick Country Crock Plant Based Butter Olive Oil
  • .25 cups Sugar (optional ;))
  • 4 Eggs
  • 3.5 cups Unbleached Flour
  • 2 teaspoons Baking Powder
  • .5 teaspoons Salt
  • 1.5 cup Milk
  • 1 tablespoon Vanilla
  • 2.5 cups Frozen Blueberries
  • 1 cup Smart Bran Cereal
  • 1 Banana
  • 1 Cored Apple
Instructions
  1. Cream butter and sugar with hand or stand mixer until light and fluffy. Add eggs and continue to mix. thoroughly. Add milk and vanilla and set aside. In large bowl mix flour and baking soda and salt. In food processor combine, cereal, banana and one cored and sliced apple. Pulse until the banana and apple are chopped into small pieces and the cereal is a rough crumb. Combine the wet ingredients with the flour and bran mixture and stir until combined. Stir in blueberries. Spoon into prepared muffin pans and bake for 30-40 minutes at 350° or until cooked through when tested.
Note
To make a vegan version of these muffins, omit the eggs and add one more banana and one additional apple.
