Banana Cakie

Ingredients:

  • 3 Ripe Bananas
  • 1 Egg
  • 1 stick Butter or Plant Butter
  • 3 tbsp Sugar
  • 0.5 tsp Salt
  • 1 tsp Vanilla
  • 2.5 cup Whole Wheat Flour
  • 2 tsp Baking Powder
  • 0.5 cup Mini Dark Chocolate Chips

Directions:

1. Preheat oven to 350°F. Line two baking sheets with parchment paper.

2. In a large mixing bowl, cream together the softened butter and sugar until smooth. Add the egg and vanilla, mixing until well combined.

3. Mash the three ripe bananas and stir them into the butter mixture.

4. In a separate bowl, whisk together the whole wheat flour, baking powder and salt.

5. Gradually add the dry ingredients to the banana mixture, stirring just until combined. The dough should be thick, soft and slightly sticky.

6. Fold in the mini dark chocolate chips.

7. Drop generous tablespoons of dough onto the prepared baking sheets, leaving approximately 2 inches between each. Gently flatten the tops with the back of a spoon.

8. Bake for approximately 12–15 minutes, until the edges are lightly golden and the centers are set. These should remain soft and cake-like rather than crisp like traditional cookies.

9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Not quite a cookie, not quite a cake. It's a Cakie! All the goodness of banana bread in a soft little chocolate-studded treat.
