Sushi Night

Ingredients:
- 2 Bricks of Firm or Medium Tofu
- 2 Cucumbers thinly sliced in strips
- 4 Carrots Thinly sliced in strips
- 0 Additional Veggie Meats as desired
- 0 Everything Bagel Seasoning
Directions:
1. Drain the tofu and press gently between clean kitchen towels to remove excess moisture. Slice into long, thin strips suitable for rolling.
2. Wash the cucumbers and carrots, then slice into thin matchstick strips. Prepare any additional vegetarian meats you'd like to include, cutting everything into approximately the same length.
3. Arrange the tofu, vegetables and vegetarian meats on a large platter, keeping each ingredient separate so everyone can choose their own combination.
4. Place the Everything Bagel Seasoning in a shallow dish. If desired, lightly coat some of the tofu strips with the seasoning for extra flavor and texture.
5. Set up your sushi-making station with prepared sushi rice, nori sheets, bamboo rolling mats and your favorite dipping sauces.
6. Place a sheet of nori on a bamboo mat, shiny side down. Spread a thin, even layer of cooled sushi rice over the nori, leaving about an inch uncovered along the far edge.
7. Arrange your choice of tofu, cucumber, carrot and vegetarian meats in a horizontal line across the rice. Sprinkle with Everything Bagel Seasoning if desired.
8. Using the bamboo mat, gently roll the sushi away from you, keeping the filling tucked firmly inside. Moisten the uncovered edge of the nori with a little water to seal the roll.
9. Using a sharp, slightly damp knife, slice each roll into bite-sized pieces.
10. Serve with soy sauce, wasabi, pickled ginger or whatever strikes your fancy!
Make it a family sushi night! Put everything out buffet-style and let everyone create their own combinations. Half the fun is seeing what everyone comes up with, and there's absolutely no requirement that your rolls look restaurant-perfect.
