Instant Pot Cheesecake Bites

Ingredients:

  • 1 Pack of graham crackers
  • 4 tbsp Melted butter
  • 1 tsp Sugar
  • 0 dash of Salt
  • 1 Sleeve of Oreo Cookies
  • 4 tbsp Melted Butter
  • 16 oz Softened Cream Cheese
  • 0.5 cup Cream
  • 4 tbsp Sugar
  • 2 Eggs
  • 2 tsp Corn Starch

Directions:

1. Prepare two silicone egg bite molds by lightly greasing each cavity with butter or cooking spray.

2. Crush the graham crackers into fine crumbs and combine with 4 tablespoons melted butter, 1 teaspoon sugar and a dash of salt.

3. In a separate bowl, crush the Oreo cookies and combine with the remaining 4 tablespoons melted butter.

4. Divide the graham cracker mixture among half of the prepared egg bite cavities and the Oreo mixture among the remaining cavities. Press firmly into the bottoms to create two different cheesecake crusts.

5. In a large mixing bowl, beat the softened cream cheese and 4 tablespoons sugar until smooth and creamy.

6. Add the cream and cornstarch, mixing until completely incorporated.

7. Add the eggs one at a time, mixing on low speed just until combined. Avoid overmixing.

8. Spoon the cheesecake filling over the prepared crusts, filling each cavity approximately three-quarters full.

9. Cover each silicone mold tightly with foil. Pour 1 cup of water into a 6-quart Instant Pot and place the trivet inside. Stack the covered molds on the trivet, offsetting them slightly to allow steam to circulate.

10. Secure the lid and set the valve to Sealing. Select Pressure Cook (High) for 8 minutes.

11. When cooking is complete, allow the pressure to release naturally for 10 minutes, then carefully release any remaining pressure.

12. Remove the molds and uncover. The cheesecake bites should be set around the edges with a slight jiggle in the centers.

13. Allow to cool at room temperature before refrigerating for at least 4 hours, preferably overnight.

14. Once completely chilled, gently pop the cheesecake bites out of their silicone molds and serve.

Two kinds of cheesecake bites from one batch! Graham cracker for the traditionalists and Oreo for the chocolate lovers. Because apparently choosing just one kind of cheesecake is asking too much.
