Deep Dish Quiche

Ingredients:
- 9 Whole Eggs
- 0.5 cup Heavy Cream
- 16 oz Grated Cheese
- 0 Salt and Pepper
- 2 cup Unbleached flour
- 1 tsp Salt
- 0.5 stick Butter
- 0.5 stick Plant Butter
- 0.5 cup Ice Water
Directions:
1. Preheat oven to 375°F. Prepare a deep-dish pie pan or XL silicone baker.
2. To prepare the crust, combine the unbleached flour and 1 teaspoon salt in a large mixing bowl. Cut the cold butter and plant butter into small cubes and work into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
3. Gradually add the ice water, a tablespoon at a time, mixing just until the dough comes together. You may not need all the water. Avoid overworking the dough.
4. Shape the dough into a disk, wrap and refrigerate for approximately 30 minutes.
5. Roll the chilled dough out on a lightly floured surface into a circle large enough to cover the bottom and sides of your deep-dish baker. Gently press into place, leaving a little extra dough at the top edge to account for shrinkage.
6. Line the crust with parchment paper and fill with pie weights or dried beans. Blind bake for 15 minutes, then remove the weights and parchment and bake for another 5–7 minutes, until the crust is beginning to turn golden.
7. While the crust bakes, whisk together the 9 whole eggs and heavy cream until smooth. Season with salt and freshly ground black pepper.
8. Stir in approximately 12 ounces of the grated cheese, reserving the remaining 4 ounces for the top.
9. Reduce the oven temperature to 350°F. Pour the egg and cheese mixture into the prepared crust and sprinkle the remaining grated cheese evenly over the top.
10. Bake for approximately 45–60 minutes, depending on the depth of your baker, until the quiche is puffed, lightly golden and the center is just set. The center should reach 160°F. If the crust begins browning too quickly, loosely cover the edges with foil.
11. Remove from the oven and allow the quiche to rest for at least 15 minutes before slicing. It will settle slightly as it cools, making those lovely deep-dish slices much easier to serve.
Sometimes you don't need a dozen fillings to make a fabulous quiche. Eggs, cream, plenty of cheese and a buttery homemade crust will do the job beautifully!
