Green Eggs, No Ham (Puffy Kale Omelet)

Ingredients:
- 4 Egg Whites
- 1 cup Washed Kale
- 2 Springs Fresh Dill
- 0 salt and pepper to taste
Directions:
1. Wash the kale thoroughly and remove any tough stems. Roughly chop the leaves and fresh dill.
2. Place the egg whites, kale and dill in a blender or food processor. Add salt and pepper to taste and blend until the mixture is smooth, frothy and beautifully green.
3. Heat a small nonstick skillet over medium-low heat. Lightly grease the pan if needed.
4. Pour the egg mixture into the warm skillet and cover with a lid. Cook gently for approximately 4–5 minutes, allowing the omelet to puff up as the egg whites set.
5. Once the bottom is firm and lightly golden, carefully flip the omelet using a wide spatula. Cook for another 1–2 minutes, until the center is completely set.
6. Gently slide onto a serving plate, folding in half if desired. Serve immediately while it's still lovely and puffy!
