Whole Grain Apple Spice Bundt Cake

Ingredients:

  • 6 Apples, Cored
  • 1.25 cup Sugar
  • 4 Eggs
  • 1.5 cup Canola Oil
  • 1 tbsp Vanilla
  • 3 cup Whole Grain Flour
  • 1.5 tbsp Baking Powder
  • 1 tsp Cinamon
  • 0.5 tsp Salt
  • 1 8 ounce cream cheese
  • 0.5 cup powdered sugar
  • 2 cup whipping cream
  • 1 tsp Vanilla
  • 1 8 ounce cream cheese
  • 1 cup granulated sugar
  • 0.25 cup milk
  • 1 tsp vanilla

Directions:

After coring the apples, give them a rough chop and place in the food processor to make a chunky applesauce. We leave the peel on!

We took the raw sugar and used a stick blender with a towel over the top of a mason jar to prevent a dust storm to try and come as close to powder sugar as we could. We then used a mixer to beat the cream cheese, our somewhat fine sugar, vanilla and just enough milk to make an icing that would drizzle over the top of the cake.
